Etymology

This huge section was originally entitled 'Cheeses of the World', accurate but a little too wordy when menu layouts are considered. Young Emma solved this conundrum at a stroke. Here's how:

Emma, about six years old I would guess, and her dad were cycling along the seafront between Walmer Castle and Deal Castle at the close of an Easter day. He called to her "What would you like for your tea tonight, Emma?" She paused, then pedaled off, shouting in a sing-song manner; "Just Cheese", "Just Cheese", "Just Cheese".

And so it shall be. Thank you Emma, whoever you are.

Cheese Powders

I've recently discovered Taste Sensation Ltd, who can supply high quality dried cheese powders in amounts suitable for home users as well as large quantities. The cheese powders originate from Lactosan.com in Denmark who are world renowned. I think another recipe for cheese popcorn is about to be created!
