Daylesford Blue cheese
Daylesford Blue is produced by Daylesford Organics, which is situated in the village of Daylesford in Gloucestershire. It is owned by Sir Anthony Bamford, the manufacturer of JCB excavators. It is made with organic pasteurised cows' milk which comes from their own herd of Friesian cows which roam the unpolluted green pastures of the Cotswold Hills.
Produced as a whole mini truckle weighing 1.5kg, Daylesford Blue is slightly harder than their Bledington Blue. It is matured for 3 to 9 weeks to develop a natural green-blue rind. Serve on its own, on a cheese board, sprinkled over a salad or with savoury biscuits.
