Crucolo cheese
Crucolo is an artisan cows’ milk cheese made by a single producer at the Rifugio Crucolo, situated at the mouth of the Val Campelle in the province of Trento.
The cheese, which is matured for at least two months is cylindrical in shape and typically weighs 13 kg. They are ivory tan in colour with irregular holes throughout. The flavour is reminiscent of a creamy Parmesan, mild and buttery yet with a surprisingly tangy finish.
