Cosso vache-chèvre cheese
Cosso vache-chèvre is produced in the valley of Bethmale from a mixture of cows' and goats' milk. It is a pressed, cooked cheese with a natural rind and must be matured for 2 months, acquiring a golden yellow colour. It is produced in rounds of 25cm in diameter, 9cm in height and about 3.8kg in weight.
