Cornish Brie cheese
Cornish Brie is produced by the Gaylard family of Cornish Country Larder near Newquay.
The cheese is made from organic pasteurised Cornish cow’s milk. It is drained and placed in placed in a cool, dark room for 9-12 days, where it develops a velvety white mould. It is then matured in a cold store for a further 2-3 weeks.
The cheese which is suitable for vegetarians, is mild and creamy with a smooth texture.
A non organic version of the cheese is also available.
