Cornish Quartz cheese
Cornish Quartz is a Cheddar-type, pasteurised, cows' milk cheese which is produced by Davidstow Creamery near Camelford in Cornwall. The milk comes from farms in Devon and Cornwall. It is made with vegetarian rennet.
The strong cheese, which is matured for 20 months, has a rich, complex range of sweet and savoury flavours that are perfectly balanced with its creaminess and lingering aftertaste. It has a crunchy, flinty texture which is caused by lactate crystals which are formed naturally during its maturation.
The light yellow cheese is sold in weights of 100g, 250g and 350g and is only available from branches of Waitrose.
