Raviggiolo cheese
Raviggiolo is a cheese which is produced from October to April, in the area of Montefeltro in the Marche region if Italy. It is made from cows' milk, or a mixture of ewes' and goats' milk. The curd is not cut, but spooned out and left to drain on mats, fern leaves, fig leaves or cabbage. It is consumed fresh.
