Giuncata abruzzese (Sprisciocca) cheese
Giuncata abruzzese (Sprisciocca) is a fresh cheese from Abruzzo in Italy. It is made with unpasteurised cows' milk and bovine rennet. The curds are moulded in reed baskets and lightly salted and pressed. It is consumed within 2-3 days. Weighing between 200g and 1kg, it takes on the texture of the basket and is milky white in colour. The aroma is of fresh milk and it has a sweet and delicate flavour
