Zufi aka Zuvi cheese
Zufi aka Zuvi is produced in the Val Formazza, province of Novara in Italy's Piemonte. It is an ancient cheese which was traditionally consumed by shepherds in the summer.
The cheese is of the fresh, fermented ricotta type made from whole cows' milk or whey or a mixture of the two. It is soft, creamy, white and spreadable and is moulded in wooden tubs where it ferments for a short while.
