Ricotta al peperoncino cheese

Ricotta al peperoncino is a ewes' and goats' milk cheese produced from whey in Guardia Perticara, Corleto Perticara and al the mountain communities of the Alto Sauro Camastra in the Italian region of Basilicata. The cheese is soft and pinkish-white colour with a salty, spicy flavour. Salt and chillies are added and it is kneaded into a smooth paste which then is stored in glass jars for several days.
