Queso de Jarra cheese
Queso de Jarra is produced by Los Corrales, in Almedijar, a town in the province of Castellón, which is located in the natural park of the Sierra de Espadán. It is, in fact, a cheese made from goats or ewes’ milk cheese or a mixture of both.
It is first matured as a cheese, then cut, beaten and mixed with whey to cause a natural ferment.
It is then matured for 6 months to 2 years and sold in jars of 150g.
The cheese is ivory-coloured and turns light brown depending the length of time it is matured. The texture is very soft and smooth. It has a very strong smell of old cheese and alcohol. It has a strong flavour with a persistent and leaves a greasy feeling in the mouth.
