Petit Morin cheese
Petit Morin is a soft, mild cows' milk cheese from the Ile de France region of France. Along the length of the little and great Morin, two tributaries of the Seine and the Marne, there are two great cheeses, Brie de Meaux and Coulommiers, formerly called "Brie Petit Moule." Petit Morin is produced in the dairy of same name. Matured for 2-3 weeks, the cheese is shaped into a flattened ball. The flavour is sweet and smooth. In the process of making the cheese fresh cream is added, a secret known by very few people.
