Pecorino del Monte Poro cheese
Pecorino del Monte Poro is a ewes' and/or goats' milk cheese produced in the Vibo Valentia province of Calabria. It has a cylindrical shape with flat sides and the fresh version of the cheese thin, yellow rind and a smooth, compact interior, with a sweet flavour. The matured version has a hard, rough, golden-yellow to reddish rind and is very aromatic and pungent.
The cheeses have a diameter ranging between 8 and 20cm, a height varying between 6 and 18 cm, and the weight is 1-7 kg
