Nostrano di Costalta cheese

Nostrano di Costalta is a cows' milk cheese which is produced from 27 June to 14 September in the alpine town of San Pietro di Cadore in the Belluno province of Italy's Veneto region.

It is cylindrical with a height of 12cm, a diameter of 30cm. 30 and a weight of 6kg. The rind is hard and yellow and the firm, yellowish interior has small holes. It has a sweet and does not require seasoning. It is a scarce cheese.
