Malga Stagionato nelle Vinacce cheese
This cheese is made in a similar way as other Italian cheeses and the production methods is driven by the need to treat the ring with a more economic ingredient than oil. In this case the cheese is submerged for two or three days in wine and 'vinacce' (Italian for pomace) of lagrain. After that it is aged for about 8 months. During this period the cheeses are turned over and washed with a cloth soaked in wine.
