Fior di latte campano cheese

Fior di Latte is a soft, cows' milk cheese from Campania in Italy. Over recent years production has spread throughout the region, but the best is from the Sorrento peninsula, Valle del Sele, Casertano, in the Alburni mountains, and the Alta Valle del Calore. In traditional production of Fior di Latte is whole, unpasteurised milk is usually used, whereas in industrial production, pasteurised milk is the norm. It is a cooked, spun cheese, with a mild, sweet, lactic flavour and is matured for 1-3 days. It comes in various shapes, including spherical braids or knots and is porcelain white in colour, with a thin, smooth, shiny rind.
