Method

  1. Fry the bacon is a dash of olive oil until crispy, pat dry on a kitchen towel and cut into bite-sized pieces
  2. Whisk the oil and vinegar in a bowl with a little seasoning to make the dressing
  3. Arrange the salad leaves on a serving dish or separate plates
  4. Arrange the bacon, tomato, avocado slices and onion rings over the salad leaves and drizzle with the dressing
  5. Top with hot poached eggs and serve immediately
