Casolet cheese
Casolet is a pasteurised cows' milk mountain cheese from the Italian province of Trento. The main feature of the is certainly its original rectangular shape with a triangular base that are rarely found in other Italian and foreign cheese. The rind is smooth or slightly wrinkled and is white or pale yellow. The texture is soft and compact with small scattered holes and the flavour is sweet and delicate. It is a table cheese produced with semi-skimmed milk and has a delicate taste. It is brined and matured for 20 to 60 days and weighs 1 to 2.5kg.
