- for the rolled chicken
- 4 chicken fillets
- 4 tablespoons of finely grated Džiugas cheese
- 4 teaspoons of mayonnaise
- Pinch of cinnamon
- sea salt and freshly ground black pepper
- 2 tablespoons of plain flour
- for the mashed potatoes
- 4 large potatoes, peeled and cubed
- 4 tablespoons of Shaved Džiugas cheese
- 4 tablespoons of single cream
- sea salt and freshly ground black pepper
- for the sauce
- 200 ml double cream
- sea salt and freshly ground black pepper
- 1 tablespoon of finely grated Džiugas cheese
Mise en place
- Preheat you oven to 180° C (350° F - gas 4), [fan oven 160° C & reduce cooking time by 10 mins per hour]
Method
- Wrap each chicken fillet in clingfilm and beat flat with a rolling pin.
- Season with salt, black pepper and cinnamon.
- Coat the inside of the chicken with mayonnaise and sprinkle with finely grated Džiugas cheese.
- Roll up the chicken fillets and coat with flour.
- Secure with cocktail sticks and pan fry in a little olive oil to just colour them.
- Place the rolled chicken pieces in a non-stick baking tray and bake for 15 minutes.
- Meanwhile boil the potato pieces in salted water for 15 to 20 minutes or until softened.
- Drain well, mix in 4 tablespoons of shaved Džiugas cheese and 4 tablespoons of double cream, season and mash until soft and creamy.
- In a small pan gently simmer the cream, add 4 tablespoons of Džiugas cheese and mix well until combined - don't let it boil or it will separate.
- Season with salt and black pepper.
Serving suggestions
Pour the sauce over the chicken rolls and serve with the cheesy mashed potatoes and a green vegetable.
Variations
If you cannot obtain Džiugas cheese, Parmesan cheese makes a good substitute
