It was the cabbage that put me off, but the more I thought about this; we have cabbage in cole slaw, and that's a dammed good salad!

Method

  1. Crush the garlic into the vinegar and allow to marinate.
  2. Wash and peel all of the vegetables.
  3. Shred the lettuce, cabbage and leeks and cut the root vegetables into fine julienne strips.
  4. Place in a large salad bowl.
  5. Chop the olives and add to the other vegetables.
  6. Season to taste, add the vinegar and garlic.
  7. Mix thoroughly.
