Ingredients

- 4 rashers of good quality bacon (Home smoked bacon is ideal for this)
- A dash of olive oil
- 1 bag of prepared salad leaves
- 1 ripe avocado pear, sliced
- 6 cherry tomatoes, halved
- 1 small red onion, peeled and sliced into rings
- 75 g of croutons
- 1 tablespoon balsamic vinegar
- 2 tablespoons olive oil
- Seasoning
- 2 poached eggs
Method
- Fry the bacon is a dash of olive oil until crispy, pat dry on a kitchen towel and cut into bite-sized pieces
- Whisk the oil and vinegar in a bowl with a little seasoning to make the dressing
- Arrange the salad leaves on a serving dish or separate plates
- Arrange the bacon, tomato, avocado slices and onion rings over the salad leaves and drizzle with the dressing
- Top with hot poached eggs and serve immediately
