Queso de La Serena
Reputedly one of the world's best ewe's cheese, this 'Denominación de Origen Protegida' cheese hails from the virtually tree-less area of La Serena in the province of Badajoz in Spain's Extremadura. It has been produced there since the Middle Ages at least, from the milk of merino sheep.
The cheese which may have specks of blue, has a cylindrical appearance and a oily yellow wax rind. In general, the cheeses weigh between 700 g and 2 kg. Their creaminess depends on how mature they are. Tortas have a soft, smooth and sticky texture and an intense, slightly bitter flavour, whereas more mature cheeses have a stronger consistency.
