Zigher cheese
Zigher is a cheese made with sour cows’ or goats’ milk in several areas in the province of Belluna.
The herb flavoured cheese is often consumed fresh. It has no rind and has a soft, slightly grainy texture. If it is allowed to mature, it forms a bloomy mould. Chives are the most common herbs used. It has a milky, fragrant aroma and a slightly sour and salty flavour, which becomes bitterer with age.
The cheese has a conical shape and weighs about 150 grams. If matured, it can be grated
