Casiello cheese
Casiello is a traditional goats' milk cheese produced July to September n the Basilicata region of Italy, but especially in the Comunità Montana Calastra Alto Sauro, in the municipalities of Aliano (Matera province) and Armento, Corleto Perticara, Gallicchio, Guardia Perticara and Missanello (Potenza province).
Curdled with goats' rennet the cheese has a thin rind of yellowish colour and the texture is compact and homogeneous. The cheese has a spherical shape, is matured for 4 months and weighs about 500g.
