Queso herreño cheese
As the name suggests this is a cheese that is produced on the island of Hierro, one of the Canary Islands. Hierro is known for its numerous and good quality cattle, that benefits from the rich pastures that abound in the area. Although the goat is the most abundant (the Romans called this island Capraria due to the large number of goats that existed there) today, there are three types of livestock. The milk of any of them, or a mixture of them, is used to make high quality artisan and industriel cheese. In the case of Queso herreño a mixture of three milks, is used, especially goats’ milk. The cheese comes as fresh or semi-matured.
A few days after the cheese is made it undergoes a smoking process. The cheese weighs about 6kg and has a cylindrical shape. It has a hard, rough, brownish rind, with wide grids due the wood used during the smoking process. Its interior is characterised by multiple holes and the colour varies depending on the proportion the various milks used in its production. Its flavour is buttery, somewhat acidic and has a smoky aftertaste.
