Azul de Los Caserinos is a blue, semi-soft, artisan, pasteurised, mixed milk cheese (70% cow, 30% goat) produced at the Los Caserinos dairy, situated in Maoxu, in the parish of Grases (Villaviciosa) in the Asturias by four brothers (Angel, Alberto, Fernando and Ruben Amandi) and their mother Mari.
The cheese is matured in a chamber, simulating the conditions of a cave for 2-3 months, during which time it is pierced to facilitate the growth of Penicillium. It has relatively complex and intense flavours and is strong and creamy. It has a natural rind. However, its production is limited.
It is also available washed in cider (upon request) to intensify the flavours and is sold in vacuum-packed wedges of 350g or as a whole 2kg cheese.
