Mise en place

  • Preheat you oven to 180° C (350° F - gas 4), [fan oven 160° C & reduce cooking time by 10 mins per hour]

Method

  1. Wrap each chicken fillet in clingfilm and beat flat with a rolling pin.
  2. Season with salt, black pepper and cinnamon.
  3. Coat the inside of the chicken with mayonnaise and sprinkle with finely grated Džiugas cheese.
  4. Roll up the chicken fillets and coat with flour.
  5. Secure with cocktail sticks and pan fry in a little olive oil to just colour them.
  6. Place the rolled chicken pieces in a non-stick baking tray and bake for 15 minutes.
  7. Meanwhile boil the potato pieces in salted water for 15 to 20 minutes or until softened.
  8. Drain well, mix in 4 tablespoons of shaved Džiugas cheese and 4 tablespoons of double cream, season and mash until soft and creamy.
  9. In a small pan gently simmer the cream, add 4 tablespoons of Džiugas cheese and mix well until combined - don't let it boil or it will separate.
  10. Season with salt and black pepper.

Serving suggestions

Pour the sauce over the chicken rolls and serve with the cheesy mashed potatoes and a green vegetable.

Variations

If you cannot obtain Džiugas cheese, Parmesan cheese makes a good substitute
