This is a ‘Denominación de Origen Protegida’ goats' milk cheese and is produced in villages east of Trujillo in the province of Cáceres in Spain's Extremadura. It has a cylindrical shape and it's height varies between 5 and 9 cm. The cheeses typically weigh between 650 g and 1.2 kg and have a semi-hard, smooth rind. The natural colour of the rind is greyish, but if rubbed in oil, it is an ochre-yellow. It can also be orangey-red if it has been coated in paprika
