Zumelle cheese
Zumelle, which is named after a hilly area on the left bank of the river Piave in the province of Belluno, is produced from the unpasteurised milk of Bruno Alpina cows.
The cheese is semi-cooked and semi-hard, with a smooth white to straw-yellow rind. The interior is yellowish with irregular holes and it has a strong aroma and delicate flavour. It is seasoned with salt.
The shape of the cheese is cylindrical, with a diameter ranging from 20 to 30 cm, a height of between 8 and 10 cm and it weighs between 3 and 5 kg. It is matured for around 40 days.
