Tomme vaudoise is a soft, unpasteurised cows’ milk cheese from the cantons of Vaud and Geneva. It is the only bloomy rinded, soft cheese that is produced in Switzerland.
The cheese has a distinctive sweet, milky taste and is sometimes flavoured with cumin. The rind is thin and white and grid-marked.
Weighing between 75 and 125 grams, the cheese should be matured for at least 21 days to develop its maximum flavour.
