Tomme de Yenne cheese
Tomme de Yenne is an unpasteurised cows' milk cheese produced by the Coopérative Laitière de Yenne Porte de Savoie. The milk is collected daily from the producers in the cooperative and then transformed by master cheesemakers. It is then matured for 6 weeks in traditional cellars. Cylindrical in shape, this cheese is uncooked and pressed. It has a rustic, grey rind which is a sign of quality. It is soft and fragrant.
