Tickler is a hard, pressed, pasteurised cows' milk cheese which has been produced since 2007 by Alistair and Helen Vanstone of Taw Valley Creamery at Taylorstown Farm in North Tawton in the heart of Devon.
It is a Cheddar tyoe cheese and is made with vegetarian rennet. It is a medium to strong cheese and is matured for up to 18 months. The flavour is sweet, savoury and tangy and it has several sporadic holes and cracks. It is available from most supermarkets in wedges for 200g and 350g.
Tickler is an excellent cheese for cooking and is ideal as a snack with fruit and biscuits, on a cheeseboard or in sandwiches with pickle.
