I found this recipe in a copy of The Times in its Food and Drink section.

It looked quite fun and was easy to make.

Anne made this as an experiment, the result was pleasant, but quite stodgy. But I expect a sweet like this always will be 'heavy'.

Mise en place

  • Preheat your oven to 180Β° C (350Β° F - gas 4), [fan oven 160Β° C & reduce cooking time by 10 mins per hour]

Method

  1. Spray a springform cake-tin with olive oil and lien the base with a circle of greaseproof paper
  2. Add the pineapple chunks to an electric mixer with a metal blade and blend to a pulp
  3. If you do not have access to a food mixer you can buy ready crushed pineapple in cans from some supermarkets
  4. Mix the crushed pineapple, flour and sugar to a bowl and mix until well combines
  5. Pour the mixture into your cake tine and bake in the middle of the oven for 60 minutes or until golden brown
  6. Remove from the oven and leave to cool in the tin for 15 minutes then transfer to a cooling rack until cooled

Serve with ice-cream
