Tala was originally produced by Hans and Heather White near Launceston, but was taken over by Menallack Farm near Penryn when the White’s decided to give it up.

The cheese is produced from pasteurised ewes’ milk and vegetarian rennet. It has a good, clean, earthy taste, reminiscent of mild creamy burnt caramel taste, becoming stronger with as it matures. It has a firm, dense, but crumbly texture.

The cheese is hard and barrel-shaped and has a natural rind. It is not available all year round.
