Sheep's milk Wensleydale cheese
Sheep's milk Wensleydale cheese is a cheese produced from ewes' milk in the town of Hawes in Wensleydale, North Yorkshire, England. Until around 1700, sheep and goats would have been the main milk producers, so the original Wensleydale is likely to have been similar to this. It is ideal for those alergic to cows' milk products and as with Wensleydale cheese, is suitable for vegetarians.
Flavour and texture
A moist, crumbly cheese that has a distinct citrus tang to it, making it an ideal dessert cheese and one that would accompany fruit well.
