Ricottone salato cheese
Ricottone salato is produced in Calabria with pasteurised cows' milk whey and/or ewes' and/or goats', with the addition of unpasteurised cows' milk and/or ewes' and/or goats'. It is 12-18cm in diameter and weigh from 500g to 1kg. It has the shape of a truncated cone and has a hard rind. The flavour is intense and persistent, tending towards spiciness. Maturation varies from a few weeks to a year or so. It is produced from November to July in the hilly-mountainous area of the region.
