Raviggiolo di pecora cheese
Raviggiolo di pecora aka Giuncata is a cone-shaped ewes' milk cheese from Tuscany. It is white in colour with a sweet and delicate taste and a creamy, spongy texture. It is made by boiling down the whey that remains after the separation of the curd, When the it reaches a temperature of 90°C it is turned gently with a spoon to make it scroll. The curd formed is allowed to drain on wooden boards. After draining, the cheese is packaged in plastic trays or baskets. It is produced from November to June.
