Rabaçal cheese
Rabaçal is an artisan semi-hard to hard DOP ewes’ milk cheese which is produced in the province of Beira Litoral, 200 km north of Lisbon. It can, however, be made with a mixture of ewes’ and goats’ milk.
The cheese is made with animal rennet and may have a few small irregular holes. It weighs about 1 kg and the interior is a dull white.
The taste and aroma of the cheese reveal the special nature of the regional flora which serves as pasture for the sheep.
