Queso del Valle del Narcea cheese
Queso del Valle del Narcea is a pasteurised cows’ milk cheese made by Maria Josefa Garcia in the village of Anciana. However, during the spring it is made with a mixture of goats’ and cows’ milk or pure goats’ milk.
The cheese is heated to 32º and the rennet is added. Half-an-hour later the curd is salted, cut into small pieces and stirred. It is then put into moulds where the mixture is left for a further 30 minutes to allow it to drain completely. Finally, it is pressed for a few hours and matured for two months.
The cheese has a cream coloured interior and rind. It is circular, weighs 500 g a variety with nuts is also available.
