Queso de Miranda cheese

Queso de Miranda is a cows’ milk cheese which is produced at Las Pedreras dairy in Avilés.

The cheese is made by taking the milk from the night before and adding rennet It is heated to 32º, the curds are cut and put into moulds where they are left to drain. It is then salted in brine and allowed to mature.

The semi-soft cheese is cuylindrical and can weigh from 350 g to 2 kg. Both the interior and the thin rind are creamy in colour.
