Queso de Fuente cheese
Queso de Fuente is an unpasteurised cows’ milk cheese produced in several localities in the ‘concejo’ of Proaza. It gets its name from the brown containers in which it is made.
The cheese is matured for three months and mixed with brandy. It has a strong and spicy taste and aroma and is yellow-white in colour, with a soft texture. However, production quantities are low, so it may well be very difficult to find.
