Provola affumicata cheese

Provola affumicata is produced throughout Campania and made from unpasteurised cowsโ milk. It is spun and then smoked indoors in with smoke from damp straw which has been burned for several minutes. Finally, it is stored in buttermilk at room temperature for 2-3 days.
The cheese is pale brown and globular. It weighs between 400-500 g. the smoking process increases its shelf life.
