Pecorino di Vazzano cheese
Pecorino di Vazzano is a ewes' milk cheese which is produced from September to June in the area of the Serra S. Bruno in Calabria. It is cylindrical with a height of 4-8cm and a diameter of 12-20cm and weighs about 1kg. It has a hard, rough rind and a slightly compact interior. It has an intense taste, with a penetrating aroma and is matured for 6 months to 1 year.
