Pecorino di Capracotta cheese
Pecorino di Capracotta is a hard, ewes' milk cheese produced from December to mid-July in the municipalities of Capracotta, Agnone, Carovilli, Vastogirardi, San Pietro Avellana, Pescopennataro in the Molise region of Italy.
Cylindrical in shape, it is 4-9cm high, has a diameter of 14-22cm and weighs 1-2.5kg. It has a hard, hazel-coloured rind and a compact interior with a few moist holes. It has an intense aroma and a spicy flavour.
