Pecorino Valle dell'Ancinale is an unpasteurised ewes' milk cheese from Calabria. It is white in colour but takes on other colours depending on how it is treated. It becomes red when treated with crushed red pepper mixed with vinegar and oil or yellow if treated only with salt. The taste varies depending on age - delicate, if you eat it fresh and spicy and savoury, if left to mature.
