Pecorino Leccese cheese
Pecorino Leccese is made with ewes' milk with added small amounts of goats' milk. It is circular in shape, is 8-10cm high and has a diameter of 18-20cm. It has a hard, wrinkled yellow to brown rind. Depending on the maturation perios the cheese can be buttery or hard and compact and the taste can be sweet or spicy. It is matured for 3-4 months and the cheeses are turned every week. It is produced in the Magliese Neretina area of Puglia.
