Pérail Bergeronnette
Pérail Bergeronnette is an unpasteurised ewes' milk cheese produced by Le Fédou Fromagerie de Hyelzas SAS in the Lozère département of Languedoc-Roussillon, which is consumed very fresh or slightly matured. Pérail is certainly one of the most ancient cheeses known and it is almost 2,000 years ago when Pliny the Elder said "a cheese, round and flat, ewes' milk, in the region of the 'gabales'" (an ancient French tribe).
It is a smooth, fine, supple, slightly creamy cheese with a slightly bloomy rind. It is matured for 6-9 days to develop its flavour and aroma without it becoming strong. Each cheese weighs 150g.
