Oropesa cheese

Orepesa is produced from the unpasteurised milk of the Talaverana breed of sheep in La Estrella, Oropesa, Puente del Obispo and Talavera de la Reina in the province of Toledo. The area has a large amount of natural stubble fields, pasture and scrubland on which the sheep feed.

The cylindrical cheese has a bright yellow rind, due to being rubbed with olive oil, and is marked with squares and the stamp of the producer. It has a hard, compact, pale yellow interior and contains holes. It has a balanced flavour which is spicy and unsalted. It weighs between 1 kg and 1.5 kg.
