Maiorchino di Novara di Sicilia cheese
Maiorchino di Novara di Sicilia is a semi-hard, ewes' milk cheese from Sicily. The milk filtered and the cheese is made in a large copper container (codara). After a couple of days, the cheese is salted every 3 days for a period ranging from 20 to 30 days depending the size. It is then periodically cleaned and scrubbed for about 2 months and rubbed with olive oil from the third month. It is matured for 8 months and weighs 10-12kg, with a diameter of 35cm and a height of 10-12cm. The texture is compact and it is yellow in colour.
