Since the Cock Brand pastes are now difficult to source, and very expensive [December 2021]. I went looking for an alternative. I soon found one: Mae Ploy Curry Pastes. They are very similar in heat, taste, and consistency. Similar to the Cock Brand pastes, as they are oil based, not water based, they can be stored in the freezer and the required quantity 'spooned' out immediately. Giving them an almost infinity shelf life - not he case if they are stored in the fridge.

I'm no expert on exactly what the various pastes should taste like, however they are all slightly different have interesting flavours. The make a brilliant curry with minimal effort. How much Curry Paste should I use?

We like our curries to be spicy, but not burning hot. I use 2 heaped tablespoons of curry paste to a curry for two people.

They also sell these curry pastes in 1 kilo tubs, but you would need to be using them on an industrial scale to go through that amount of curry paste!
